Serve chilled in a wide-rimmed Champagne flute to let the complex flavours emerge from the glass. This is a classic, richer style of English sparkling wine which will impress guests served with smoked salmon canapés or on its own for a celebration, but can also stand up nicely to creamy lobster or fish dishes at a main meal. If you want to try your hand at sparkling wine cocktails, try this with a dash of fine Cognac (serve the wine into the chilled flute with 25ml cognac).
